It’s Still Summer: Our favourite cocktails

Don’t let anyone tell you otherwise – it’s still summer, right Foodies? We’re not quite ready to let go of the long evenings, the endless ice cream, picnics at the beach, or bike rides around the seawall! This summer, the VFT Foodies have even had a chance to take part in some of Vancouver’s best things to do:

It’s been a busy summer, to say the least! But before we surrender to Fall, we give you a list of the city’s best cocktails – and their recipes! So you can enjoy every last drop of summer.

COCKTAIL: Ginger Margarita

1.5 oz Sauza Tres Generaciones Anejo Tequila
.5 oz Cointreau
.75 oz Ginger-Lime Syrup
1 Lime wedge

Rim a rock glass with Salt. In a shaker glass filled with 2/3 ice, add ingredients, cover and shake vigorously. Pour drink into the salt rimmed rockglass, squeese lime wedge and drop into drink.

Ginger Lime Syrup
1 quart peeled and sliced ginger
1 quart fresh squeezed lime juice
1 quart sugar
1 stalk lemongrass smashed and sliced

Bring to a boil and puree. Strain, reserve liquid and dry pulp in a 170°F oven. When pulp is dry grind to a powder. Mix powder 50/50 with Kosher salt.

COCKTAIL: Breakfast Beer Cocktail No. 1
An indulgent blend of booze, espresso and chocolate, to kick start your morning. Featured at Donnelly Group establishments.

1 ounce (30 mL) Maker’s Mark
0.25 ounce (7 mL) Fernet Branca
0.75 ounce (22 mL) Kahlua
1 egg
2 ounces (60 mL) Phillips blue buck

In a cocktail mixing glass, crack 1 egg and discard shell. Add Maker’s Mark, Fernet Branca, Kahlua. Dry shake. Pour pale ale into drink. Fill shaker with ice and shake vigorously for 45 seconds. Strain contents into snifter glass.

Garnish with 3 coffee beans

COCKTAIL: Signature Rosé Sangria
The penultimate gourmet summer beverage. Featured at the Lobby Lounge in the Fairmont Pacific Rim. We don’t have the exact recipe, but you can trust your tastebuds on this one!

Blue Mountain Sparkling
Peach
Fresh seasonal berries
Brandy
Citrus
Chardonnay
Cabernet merlot
